Reviews say that all non-stick skillets eventually lose their finish, so you needn't shell out for a fancy one. The WearEver Premium Hard-Anodized 12-inch skillet is chosen as a budget pick in several reviews. Not only does it conduct heat well and distribute heat evenly, it's light and maneuverable. The dark interior, however, makes it difficult to see how the fond (the material on the bottom of the pan after sautéing) is browning. This skillet must be hand-washed, but owners report that it releases food well, so cleanup is relatively easy. If you're looking for the best skillet available at any price, reviews point to the All-Clad Stainless 12-Inch Fry Pan (*est. $140), but this skillet, like all uncoated cookware, requires you to add at least some fat; otherwise, food will stick. Another option is a cast-iron skillet like the Lodge Logic Pre-Seasoned 12-Inch Skillet (*est. $20), which is naturally nonstick without the use of Teflon.

Pans were tested for comfort and cooking performance with a 12-egg frittata.
