Global santoku knives, May 30, 2009
The knives are better than my cooking skills! The three piece set is great, very sharp and lightweight. I'm a kitchen novice, but it's actually fun every time I get to use the knives. I would recommend buying a wall magnet to hang the knives for easy storage and to keep them sharp.
Good Quality Knives, April 19, 2009

These are very nice knives, and the price is very reasonable for the quality you are getting. I just bought some for my husband for his birthday, and he is completely in love with him. He is going to culinary school, so he is very specific about the kind of knife he likes. They are very sharp, and come with instructions on how to take proper care of them, such as sharpening and cleaning. If anyone is looking to spend a little more for a good quality basic set of chefs' knives, I would definitely recommend these. The only other thing to take into consideration is the unique handle design. My husband likes it; I know some prefer the more classic style of handle. However, I have not found that it makes using the knife difficult or awkward. It is more a matter of personal preference.

Better than Expected, October 22, 2008
I got these on a whim. Compared to the other high quality knives I've used these win. I was surprised how much I loved them. I'll keep my other knives, but these are very functional. The only knives I want to use.
Chef's knives, September 16, 2008
Excellent knives! I love the design -- all one piece so they are very easy to clean -- nothing gets into the handle grip. It is such a delight to work with such sharp blades!
I'm a satified customer, September 8, 2008

I did a lot of research before purchasing my first knife set. I'm a recent college grad and want to start collecting some quality kitchen equipment to last me a lifetime (hopefully). My initial tip on these kinves was from the book "Kitchen Confidential" by Anthony Bourdain - a great read if you are interested in exploring cooking and the restaurant world or "culinary underbelly" as I believe he calls it. Bourdain recommends Global knives in the book. These knives are the sharpest I have ever used. They are also very light and a delight to hold - great craftsmanship. My mother kept a set of heavy German knives that were dull as rocks (I don't think she ever sharpened them, well maybe once a decade) and it was always frightful to use them growing up as I felt I'd cut my finger clear off trying to get a raw potato sliced (I loved making the mashed potatoes). The three piece set gives you a lot of versatility. I've even *gasp* used these as an impromptu cardboard box cutter. One cool thing about this set is it includes a Santoku as the main chef's knife. According to Wikipedia, the "'granton edge' release pattern (scalloped) on the blades that not only adds style, but helps to release thin slices and sticky food after slicing." Cool. Looking into sharpening options - suggestions welcome. Thank you Amazon for the very timely delivery (it currently looks like they are on backorder or something, though).

This guide to knife buying lists four favorites among Japanese-style knives but doesn't detail testing. Driscoll says the Global's "lack of bolster, sharply angled heel, and thin handle felt precarious to even some of its strongest advocates."

Choice magazine is similar to ConsumerReports.org in methodology, comparing 13 knives. While testers say the Global knife was excellent at cutting, some thought the handle was too thin or uncomfortable.

5. Amazon.com

About 70 owner reviews give the Global 8-inch chef's knife a very high average score, with just a few negative reviews. A couple of reviews say the knife broke when it was dropped on the floor.

This website explains its testing methodology in exacting detail, but testing is conducted only by one person. In this evaluation of 11 chef's knives, the Global 20-centimeter cook's knife performs best, but Michael Chu ultimately finds the MAC Mighty chef's knife more comfortable.

7. Kiplinger.com

Along with general buying advice, chef Wayne Nish discusses his specific preferences among knives. For the most part, Nish prefers Wüsthof Classic and Grand Prix knives, but he says Global knives make good slicers because of their thin blades.
