
The Henckels Twin Professional "S" line of knives is, along with Wusthof, one of the classic forged German brands that have a strong reputation for quality and durability. These knives have a standard design that hasn't changed in years, other than the transition to synthetic (rather than wooden) handles. Most reviewers say they are impressed by the performance of these knives, but others say they are relatively dull out of the box. Because Henckels knives are forged from softer steel than their Japanese counterparts, these knives require frequent sharpening, but owners say this is easily accomplished with a guided knife sharpener thanks to their standard edge bevel. Some owners say these knives are too expensive, considering they are similar in price to the more highly rated Wusthof Classic knives (*Est. $180 for three) .
ConsumerReports.org includes the Henckels Twin Professional "S" knives in its roundup of more than 50 knife sets, and CookingForEngineers.com gives the Henckels chef's knife a "satisfactory" rating.
