Misono UX10 knives are this Japanese manufacturer's flagship line. These knives are made from Swedish stainless steel, which reviewers say is comparable in hardness to high-carbon steel but has the stain-resisting qualities of stainless. The handle, which reviewers say is very comfortable, is made from water-resistant wood. Reviewers praise this knife for its good balance, ease of sharpening (compared with other Japanese knives) and durability. Misono does not manufacture this knife specifically for sale in the United States, which limits its availability, but a few specialty online retailers carry the Misono UX10. For a less expensive but well-reviewed santoku knife, reviewers recommend the Shun Classic Santoku (*Est. $130) .

There are few reviews of this knife available, and those that we did find are several years old.
