RH Forschner by Victorinox Fibrox

Reviews usually aren't complimentary about inexpensive kitchen knives, but the RH Forschner by Victorinox Fibrox beats some products that go for double and even quadruple the cost. The RH Forschner by Victorinox Fibrox is made from stamped stainless steel, and there's no getting around the fact that it lacks the heft of forged-metal knives. Some also miss the bolster, the lip that separates the handle from the blade, although everyone seems to like the non-slip Fibrox fiber handle. In Australia's Choice magazine, the review format left room for "bad points" on each knife, and there were none noted for the RH Forschner by Victorinox Fibrox. User reviews at Amazon.com indicate extremely high satisfaction. If you prefer a heavier forged knife, consider the Wüsthof Classic (*Est. $150 for three).
Cook's Illustrated and its sister magazine, Cook's Country -- as well as ConsumerReports.org and Choice magazine -- do thorough, unbiased testing of kitchen knives. ConsumerReports.org tests the most knives, but Cook's Illustrated offers the best commentary. Owner reviews at Amazon.com are also helpful.
