- Extremely sharp
- Ergonomic design
- Pronounced blade curve for better rocking action
- Heavy
- Prone to pitting if not wiped off promptly
- Expensive
The Shun Ken Onion Chef's Knife, which is available in several blade sizes ranging from 4.5 inches to 14 inches, has an unusual design with an offset handle and wavy Damascus-patterned blade. Despite the fact that the smaller versions of the knife are significantly less expensive, owners say that the 8- and 10-inch versions are much more useful and therefore a better value. Most reviewers find the Shun Ken Onion Chef's Knife comfortable to hold, but some owners, particularly those with larger hands, find the ergonomic handle uncomfortable. The knife's 16-degree angle improves its sharpness but makes it considerably more difficult to sharpen for an average home user. This knife was designed by Ken Onion, an award-winning designer of innovative knives. For less-expensive knives that experts say have similar performance, reviews recommend the RH Forschner by Victorinox Fibrox (*Est. $65 for three).
One foodie magazine includes the Shun Ken Onion Chef's Knife in a review of innovative knife designs, and the knife is featured in Bon Appetit magazine. Most owner reviews on Amazon.com rate the knife highly, but a few are critical of the unusual design and cost.
