Chef's Choice 120 Diamond Hone 3-Stage Professional Knife Sharpener tops the charts for its ease of use and sharpening performance. This sharpener boasts rotating, diamond-coated conical hones in the first two stages plus a stropping/polishing disk for its third stage. Compared to its less expensive sibling -- the Chef's Choice Diamond Hone Multi-Stage 110 (*Est. $85) -- the Chef's Choice 120 has the benefit of spring guides (rather than magnetic ones). Experts say the spring guides are better at holding angles, with testers at one foodie magazine noting that the guides very easy to use.
The Chef's Choice 120 also packs a few other goodies that nudge it ahead of the Chef's Choice 110. For starters, the 120 can sharpen serrated knives as well as straight-edged blades. It also sharpens a little faster; a first sharpening takes about a minute, while resharpening around 10 seconds. Still, experts warn that both models can eat away at blades if you're not paying attention, and some owners are disappointed with blade scratching. In another minor glitch, The Washington Post says the Chef's Choice 120's screeching sounds make it "a little scary to use at first."
