The Chef's Choice 130 operates quietly and sharpens knives in less than half the time as the less-expensive Chef's Choice 110 (*Est. $85). Reviews say that the Chef's Choice 130's spring guides hold angles better than the cheaper 110's magnetic guides. Another major upgrade is a non-motorized slot that serves as a sharpening steel. The Chef's Choice 130 isn't cheap, and it does have the potential to scratch knives and remove too much metal.
