Seasoned bakers appreciate stand mixers for their ability to handle tough tasks, but unless you need to frequently mix stiff batters or bread dough, a hand mixer might be enough to meet your needs. While hand mixers lack the power of larger stand mixers, the best among them can perform many of the same chores, saving you money and storage space. Other things to take into consideration before shopping for a mixer:
- Don't worry about wattage and speed. In tests, wattage proves to be totally inconsequential in overall performance. That said, three to five speeds are usually sufficient, with a low, slow speed being necessary to prevent splattering. More important mixer features: its design, the shape of its bowl and the movement of its attachments -- all of these elements contribute to the mixer's overall performance.
- Look for a slow-start feature to avoid messy splatters and cooking snafus.
- Consider size and weight. Heavier stand mixers are sturdier appliances, which means they can be more difficult to move. Planning on frequently moving your mixer in and out of storage? Head off hassles and look for a lighter model.
- Look for a locking mechanism. Stand mixers with a locking mechanism on the power head are easier to operate. This mechanism holds it in the up position even when the beaters are weighted with heavy dough, as well as keeping the beaters from riding up while mixing thicker substances.
- Consider the height of a stand mixer. This is especially important if you will be using it under a cabinet because most models need extra clearance to raise their tilting head. Not sure you're choosing the right model? Measure your available countertop space and then measure the space required for the mixer to confirm you can squeeze it in, even in a raised position.
- Bowls are important, too. For hand mixers, consider bowls that make your job easier. A bowl that's deep will help keep ingredients under control. Also, keep in mind that some bowls are made with anti-slip materials on the outside, so they won't slide as you mix inside them.
