For a plate that can go from oven to table, stoneware pie dishes give you more choices of colors and designs. Many are also deeper, so they work well for heavy fruit pies and small casseroles. On the downside, stoneware and ceramic pie plates are heavy, and don't allow you to monitor a baking crust like glass pie pans do.
Among stoneware pie plates, reviewers like the Emile Henry Pie Dish, which is available in a rainbow of colors. Good Housekeeping's tester, Sharon Franke, says it well: While it baked fine, its looks set it apart as an "all-purpose oven-to-table server." Nevertheless, the 20 users posting to this site give the Emile Henry pie plate an average 5-star rating. Comments include "beautiful," "the best pie dish" and "worth every penny." Some users note that the plate cleans easily and crusts are crispy, even on the bottom. One user says the pan produces crusts that are "possibly" less flaky than those baked in glass pans, but adds that the overall result is still "outstanding."
