Australia's Choice magazine tests eight models of pressure cookers with an approximate 6-quart capacity. Cooking performance is based on the ability to turn lamb shanks and dried soup mix into a tender, flavorful meal,. The ease of locking the lid, using the controls, disassembling and cleaning the unit accounted for 60 percent of a product's overall score. The Fagor Duo and Cuisinart Electric Pressure Cooker CPC-600 perform well in the cooking tests. This website also provides extensive information about what to look for when buying a pressure cooker, how to use one, and some general advantages and disadvantages of pressure cooking.

This thorough comparison test of pressure cookers dates back to 2005. Editors of Cook's Illustrated narrow their review down to six models that were approximately 8 quarts in size -- enough to make eight servings. They eliminate models that were electronic because they cannot be opened once the pot is sealed. They also only choose models with a stainless-steel pot, which did a better job with saut�ing ingredients than aluminum pots. Testers gauge the time it takes to reach full pressure and whether the bottom of the pot heats evenly. They find all the pots equally easy to clean after preparing two dishes -- risotto and baked beans. Editors recommend one pressure cooker and three others with reservations.

Amazon.com is a good place to check ratings once you've narrowed your choices down to a few models. The Presto 6-, 8-, 16- and 23-quart models all receive an average of at least 4.4 stars out of five. The Presto 6 Quart receives a perfect score from more than 200 owners; however, a few complain about food burning and sticking to the bottom of the pot. More than half of the 36 owner reviews of the Fagor Duo 8 Quart give it a perfect rating, although some owners say the safety features failed. The Cuisinart Electric Pressure Cooker CPC-600 receives mostly praise; however, a few owners report technical problems and poor customer service from Cuisinart. Larger capacity pressure canners are also reviewed here, with the Presto 23 Quart Pressure Canner averaging 4.5 stars from more than 150 owners.

Test Kitchen: Is Pressure Modern Again?

In this older report, veteran food writer Marian Burros tests four pressure cookers with several dishes like pot roast, a whole chicken and risotto. While the dishes tasted the same and the cooking time was identical, Burros selects the Kuhn Rikon pressure cooker as the winner for its ease of use and "absolute quiet." She likes its pressure-level indicator and says that it's worth the expense. She prefers the Fagor Multirapid Plus, now discontinued, over the Fagor Splendid. She did not like the old-fashioned pressure control on the Mirro, which requires constant adjustment. All the models in the test were in the range of 5 to 6 quarts.

Reporter Monica Bhide interviews Lorna Sass, the author of three pressure cooker cookbooks. Bhide notes that pressure cookers should not be used to cook delicate foods, such as fresh green vegetables or shrimp. Sass prefers cookers made by Kuhn Rikon, which have an integrated lid-locking system and five safety-release systems. Even with the newer safety features, Sass cautions that pressure cookers require more vigilance than slow cookers.

Cooking.com normally has quite a few reviews on kitchen appliances and gadgets, but most pressure cookers on this site have less than 10 reviews written by owners. Kuhn Rikon pressure cookers earn a near-perfect rating from 15 owners and are available in three sizes: 5 quarts, 7.25 quarts and 12.25 quarts. The only manufacturer of large-capacity pressure canners that receives reviews on this website is Presto. The Presto 23-Quart Pressure Canner receives 4.8 stars from 10 owners. Presto's smaller-sized pressure canners also receive favorable reviews. The Cuisinart Electric Pressure Cooker CPC-600 earns 4.8 stars from 10 owner reviews. Two other electric pressure cookers from Fagor and Deni receive high marks from a handful of owners. Many of the products are sold in a set with several pieces.
