Reviewers say the 14-inch All-Clad Stainless Petite Roti Pan is ideal for cooks with a smaller oven or when roasting smaller quantities. It sandwiches aluminum between an interior layer of 18/10 stainless steel and an exterior layer of magnetic stainless steel. This combination nicely browns poultry skin and is very easy to clean. However, in one professional review, the pan had some hot spots, and the handles became hot during deglazing. If you need a larger pan, the All-Clad Stainless Roti Pan (*Est. $200) and Calphalon Contemporary Stainless Roaster with V Rack (*Est. $130) are two inches longer. All three pans come with a rack and lifetime warranty.
The Los Angeles Times and The New York Times included All-Clad roasting pans in their lineup. The more recent Los Angeles Times review tests how well five roasting pans cook a turkey and make gravy on the stovetop. This older review compares five roasting pans without a nonstick coating: one anodized aluminum, one untreated aluminum and three made of stainless steel. All of the pans roasted a 4-pound chicken with equal results. The primary judging criteria was how well the pan deglazed with white wine. The larger version of the All-Clad Stainless Petite Roti Pan is described as a "pricey beauty."
