Reviewers say the 16-inch All-Clad Stainless-Steel Large Roaster with Rack is ideal for roasting meat and vegetables in the oven as well as deglazing sauces or gravy on the stovetop. This versatile pan is also safe to use under the broiler or to clean in the dishwasher. Although All-Clad is synonymous with high-quality cookware, it lacks the tri-ply construction of the Calphalon Contemporary Stainless Roaster with V Rack (*Est. $130), which costs considerably less. One professional review says the pan exhibits some hot spots and the handles became hot on the stovetop.
We found plenty of owner reviews for the All-Clad Stainless-Steel Large Roaster with Rack. Overall, it gets positive reviews at Cooking.com, but some owners at Amazon.com say the single-ply of stainless steel was inferior to other All-Clad products. One advantage, however, is that the pan weighs about 5 pounds, which some cooks may find easier to maneuver. The All-Clad roaster includes a nonstick rack and is covered by a lifetime warranty. If you don't need to cook large quantities, such a 20-pound turkey, this pan is also available in a 14-inch size. Experts warn that using a pan that's too large for the amount of food can cause the drippings to burn.
Cook's Illustrated magazine compares the All-Clad Stainless-Steel Large Roaster with Rack to three other roasting pans in a test of stainless-steel versus nonstick cookware. Owner-written reviews at Cooking.com, Williams-Sonoma.com and Amazon.com indicate how well this pan holds up to long-term use.
