The Calphalon One Infused Anodized roaster gets the highest scores even though it's more expensive than others. This anodized-aluminum roasting pan has a dark, rough-textured interior coating that not only attracts heat but also resists sticking. Reviews say this pan, which can be used on the stovetop or under the broiler, heats evenly and does a superb job browning foods. The Calphalon One cannot be placed in the dishwasher, but owners posting to Cooking.com say it's easy to clean with hot, soapy water.

We found reviews in Slate.com, the Los Angeles Times and Canadian Living. Slate.com's Jonathan Kauffman is the only reviewer who made turkey, roasted pork, vegetables and gravy in this pan. We wish the other publications had made gravy in the pans they tested, since several owners say roasting pans can warp when used on a stovetop. We also read some brief consumer reviews of the Calphalon One roasting pan at Cooking.com.

Los Angeles Times editors test five roasting pans by roasting a four-pound chicken and deglazing with white wine. The Calphalon One Infused Anodized roasting pan earns raves; editors say it works well in the oven and on the stovetop and "could stand up to a good scouring at day's end."

3. Canadian Living

Reviewer Christine Picheca tests five roasting pans by preparing chicken and potato wedges. The Calphalon One Infused Anodized Roaster made for "beautiful crispy skin on the chicken" and left ample room to turn potatoes.

Amazon.com is a great place to visit once you've narrowed your choice down somewhat. At the time of our visit, though, only two owners had reviewed the Calphalon One Nonstick roasting pan -- not enough to gauge a consensus.
