We found reviews of this pan in Cook's Illustrated, Slate.com, and Canadian Living magazines. Of these, the Cook's Illustrated review is the most thorough. Slate.com's Jonathan Kauffman tested this pan with the lid on, which caused the turkey he cooked to steam instead of roasting. Cook's Illustrated tested this pan with the lid off and liked it well enough to recommend it for infrequent roasters.

Reviewers agree that the Granite Ware Rectangular Roaster is the best pan for occasional roasting: It's far superior to disposable aluminum pans, but it isn't nearly as sturdy as the Calphalon Contemporary Stainless Steel Roasting Pan (*est. $130). Editors at Cook's Country consider the Granite Ware roaster a good budget choice for infrequent use, as long as you don't use it the lid or attempt to make gravy on the stovetop. Using the lid causes turkey and other meats to steam rather than roast, and it inhibits browning. Owners who have posted reviews on Amazon.com are generally happy with their Granite Ware roasters. Some complain about the pan's light weight, but others counter that this makes it easier to maneuver, especially when full. Granite Ware also sells an oval roaster (*est. $20) that performs almost identically.

Kauffman tests six roasting pans by cooking a turkey and a pork roast. The Granite Ware USA Roaster with Lid earned a "not recommended" rating because the turkey cooked in it tasted "boiled," but the results would have probably been different if he hasn't used the lid.
