Granite Ware Oval 18-inch Covered Oval Roaster

- Good value
- Includes lid
- Well-insulated interior
- Sturdier than disposable aluminum roasting pans
- No rack included
- Not suitable for stovetop use
- Less sturdy than more expensive roasting pans
Reviewers agree that the Granite Ware 18-Inch Oval Roaster is the best pan for occasional roasting: It's far superior to disposable aluminum pans, but it isn't nearly as sturdy as the Calphalon Contemporary Stainless Roaster with V Rack (*Est. $130). One foodie magazine considers the Granite Ware roaster a good budget choice for infrequent use, as long as you don't use it the lid or attempt to make gravy on the stovetop. Using the lid causes turkey and other meats to steam rather than roast, and it inhibits browning. Owners who have posted reviews on Amazon.com are generally happy with their Granite Ware roasters. Some complain about the pan's light weight, but others counter that this makes it easier to maneuver, especially when full. Granite Ware also sells other sizes of oval roasters and a 19-inch rectangular roaster.
We found reviews of the Granite Ware 18-Inch Oval Roaster in Slate.com and Canadian Living magazine. Slate.com's Jonathan Kauffman, however, tested this pan with the lid on, which caused the turkey he cooked to steam instead of roasting. We also turn to owner reviews at Cooking.com and Amazon.com.

Editors evaluate eight roasting pans, including one Granite Ware model, but we're not sure which size pan is tested. After testing, each pan gets an overall rating, plus a short discussion of its performance.

Jonathan Kauffman tests six roasting pans by cooking a turkey and a pork roast. He evaluates each pan and its roasting rack, and awards a score for ease of cleaning. The Granite Ware Oval Roaster is not recommended because the turkey tasted "boiled," but the results would have probably been different if he hasn't used the lid. He doesn't mention the size, but the price was in line with the 18-inch version of the Granite Ware Oval Roaster.

In this review by Christine Picheca, she is testing materials more than a particular brand of roasting pan. Her five materials are foil, ceramic, enamel-coated steel, stainless steel and hard-anodized aluminum. She tests these five roasters by preparing chicken and potato wedges. We like that she shows a picture of the cooked bird in each pan, so we can gauge how well it browned. She doesn't name one roasting pan as a favorite, but does summarize the pros and cons of each. A "speckled pan," whose manufacturer is not named, is judged the best value.
