Unlike potato chips, making your own tortilla chips isn't that hard. To make tortilla chips, buy fresh corn tortillas and cut each one into eighths. Heat 1 cup of vegetable oil to 350 degrees Fahrenheit in a large, heavy-bottomed pot, and fry chips until golden brown, about 90 seconds. Flip chips and fry until golden on the other side, about 30 seconds longer. Drain on a double layer of paper towels and sprinkle with salt.
Tortillas can also be brushed with oil and baked at 400 degrees Fahrenheit for 10 minutes, or until evenly browned.
